When we talk about gastronomy, a theme that in recent years has been gaining more and more attention and fans, we cannot fail to mention the list of equipment and equipment that are an important part of food preparation. In order to compose the new MCB exhibition window, utensils used in Brazilian cuisine since the 19th century were mined, both for food processing and for table service.
Processing
Food processing is a fundamental step in cooking, it is surrounded by techniques, customs and traditions and ranges from processing (separation, cleaning, etc.) from its fresh state to the preparation of dishes (grinding, grinding, cooking). Throughout the history of food, equipment has been used that has revolutionized the way food is prepared and preserved. We can divide the processing into two moments: before the advent of electricity, with handmade and pre-electric utensils driven by human effort; and then, with the electric utensils that contributed to reduce the time to prepare the dishes. The objects of the MCB collection narrate the transformation in the processing of food through the 19th and 20th centuries.
Service
The way food is presented and served is an important part of the gastronomic experience. Over the centuries, utensils (plates, cutlery, drink containers, etc.) have incorporated new shapes, materials, colors and styles, with the aim of making the act of the meal even more pleasant and practical, in addition to transmitting signs of distinction . Initially restricted to a privileged section of society, such as the dinner services of the Crespi Prado collection (displayed on the first floor of the Museu da Casa Brasileira), these utensils have diversified and, very slowly, have become popular, especially after the increase in industrial production . Some examples of this showcase are pioneers in the use of plastic in service objects.
